Get a headstart on Thanksgiving!

Thanksgiving is Thursday, but there are a few items you can prepare in advance. For example, check out this recipe for Apple Strudel courtesy of Sean Woods, Executive Chef at The Ritz-Carlton Orlando, Grande Lakes. Chef Woods recently shared recipes, along with tips for cooking an organic Thanksgiving, with Mario Bosquez during an interview on Martha Stewart Living Radio. The "Living Today" show airs on Sirius Satellite Network.

Apple Strudel
1 pound Gala Apples (peeled, cored and chopped in small cubes)
1/4 cup golden raisins
1/4 cup dried cranberries
1 cup simple syrup (1 part sugar, 2 part water)
1 table spoon of dark rum
1 teaspoon ground cinnamon
1 dash of Ginger
½ vanila bean (just use the seeds scraped form the pod)
4 tablespoons white sugar
2 slices brown bread, crumbled
¼ cup toasted almond flour
1/2 (16 ounce) package phyllo dough
1/4 cup butter, melted
1 egg (egg wash)

Directions
1. Boil the syrup, add rum and let soak the cranberries and the raisins ( if you can try to let soak for at least 24 hours)
2. Preheat oven to 400 degrees F (200 degrees C).
3. In a bowl, combine apples, raisins, cranberries, vanilla, ginger, cinnamon, 2 tablespoons of sugar and the bread crumbs. Stir well.
4. Spread several sheets of pastry slightly with melted butter and lay them on atop the other on a baking sheet, sprinkle a little sugar in between as well. Spread the fruit mixture evenly over the top sheet, then roll the sheets up to form a log shape. Brush with melted butter again. Brush some egg wash for color and Sprinkle a nice line of sugar on top for decoration.
5. Bake in preheated oven 30 minutes, until pastry is golden brown and fruit is tender. Sprinkle a little snow sugar, decorate the tray with cinnamon sticks, fresh apples and spices.

Greenough Montana is getting a little greener this summer as The Resort at Paws Up announces its partnership with ClearSky Climate Solutions and offers guests carbon neutral vacations without trimming the comfort. SUPER SCOT PIPING ACROSS U.S. FOR CHARITY AND COUNTRY

Rob Calder, a 32 year old bagpiper from Edinburgh, is busking his away across the United States for charity. Calder will spend six weeks playing his bagpipes from coast to coast, rain or shine, relying on the kindness of locals and people of Scots decent to host him along the way. He will also offer a piping performance for room and board or a charitable donation.

Mr. Calder arrived in New York June 9, and made his first $67 on the corner of 47th and 5th. He hopes to earn a minimum of $5,000 for Ecas, an organization directed by his mother that lends help and support to Edinburgh's physically disabled. Friday he heads to Pennsylvania followed by Washington DC, Virginia, Louisiana, Texas, Arizona and Colorado before finishing his trip in California in late July.

Mr. Calder is one of many volunteering for charitable causes in lieu of unemployment. After losing his job he was inspired by Scotland’s Homecoming year to invest his compensation package and free time in travel while raising money for charity.

Glasgow born, he calls himself the Bagpipe Busker. A friend built the site for him and he’s funding this himself. Calder's planned itinerary, blog and information on how to make a donation can be found at www.bagpipebusker.com.

When asked what he hopes to accomplish, Calder replied “I’d like to earn as much as I can for Ecas, and I’ll also try to raise awareness about Scotland, Glasgow and the World Pipe Band Championships in August to thank them for being amongst the first to support me with a donation to the cause.”

Montréal's 25th Annual Bike Fest!

For eight days, the bike is going to be celebrated in one of North America’s most active, bike-friendly cities. The 25th annual Montréal Bike Fest is taking place from May 31-June 7. An Italian Accent Coming to Edinburgh, Scotland

This fashion-led Italian hotel will be one of the city's most prominent developments this decade.

Due to open June 3, 2009 - the hotel will have a plum position on the Royal Mile. Styles from Milan's best-known fashion house are to arrive in Edinburgh's old town and the hotel will be located in the Bank of Scotland Bridge development on the High Street. It is anticipated that the hotel will offer 130 rooms, a Bar Missoni, Missoni Cucina restaurant and a spa and fitness centre.
